Gajar Ka Halwa (Carrot Halwa), Hot and desserts
In the realm of indulgent desserts that captivate the senses, Gajar Ka Halwa stands out as a timeless classic. This delectable treat, rooted in Indian culinary tradition, is a celebration of simplicity and flavor. Translating to “Carrot Pudding” in English, Gajar Ka Halwa has woven its way into the hearts and palates of many, becoming a cherished dessert across the Indian subcontinent.
Ingredients :
- 1 kg carrots, grated
- 1 liter milk
- 1 cup sugar (adjust according to taste)
- 1/4 cup ghee (clarified butter)
- 1/4 cup chopped nuts (cashews, almonds, pistachios)
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- 2 tablespoons raisins (optional)
- 1 tablespoon grated khoya (optional)
Instructions:
- Wash and peel the carrots. Grate them using a grater or food processor. Set aside.
- In a heavy-bottomed pan, heat ghee on medium heat. Add the grated carrots and sauté for 5-6 minutes until they start to release their moisture.
- Pour the milk into the pan and bring it to a boil. Reduce the heat to low and let the carrots cook in the milk until they become soft and the milk reduces to about half its quantity. Stir occasionally to prevent sticking.
- Add sugar to the pan and continue cooking on low heat. The sugar will melt and release more moisture. Stir frequently to avoid burning.
- In a separate small pan, heat a tablespoon of ghee and roast the chopped nuts until they turn golden brown. Remove from heat and set aside.
- Once the milk has reduced and the carrots have cooked through, add the roasted nuts, cardamom powder, saffron strands, raisins, and grated khoya (if using). Mix well.
- Continue cooking the halwa on low heat, stirring occasionally, until it thickens and starts to leave the sides of the pan. This can take around 30-40 minutes.
- Once the halwa reaches the desired consistency, turn off the heat and let it cool slightly.
- Serve warm garnished with a few more chopped nuts on top.
Tips: Gajar Ka Halwa
- For a richer flavor, you can replace some of the milk with condensed milk or evaporated milk.
- Adjust the sugar quantity according to your taste preference.
- If you don’t have khoya, you can skip it or replace it with a tablespoon of milk powder.
- You can serve gajar ka halwa as is or with a scoop of vanilla ice cream for a delicious twist.
